How to make Telangana Chicken Curry
Chop the onions, ginger, garlic cloves, tomato, dry red chilies, and cashew nuts in separate bowls. Grate the coconut in another bowl. Add these chopped ingredients along with red chili powder, cumin seeds, coriander seeds, poppy seeds into a grinder to make a thick paste. Then, wash the chicken and boil it in a large pan over medium flame. Pat dry and cut into pieces.
In a large bowl, add the paste keeping a little aside for further use along with mustard oil, turmeric powder and chicken pieces. Mix everything well, so that the chicken gets evenly coated by the masalas. Move this bowl to the refrigerator for thirty minutes and then store it at room temperature. Let the chicken marinate well.
Now, in a separate pan, pour the vegetable oil and heat it over medium flame. Once hot, add the chopped onions, curry leaves and salt as per your taste into the pan and fry. Add the remaining paste and keep stirring it. Add half cup of water into it as well. Now add the marinated chicken pieces into the pan and mix well.
Cover the pan using a lid and let it cook for another few minutes over a medium flame. Remove the lid and keep stirring the whole mixture inside the pan in order to prevent it from sticking at the base of the pan. Sprinkle garam masala powder on top and your Telengana Chicken Curry is ready to be served. Garnish it with mint leaves.
